DIY lavender soda

Move over elderflower cordial…

As the average canned fizzy drink is packed with sugar (or artificial sweeteners) and E-numbers, we’ve decided to take a more natural approach to quenching our thirst this spring. And for a light, fragrant sweetness that beats that cloying sickly-sweet flavour of canned drinks hands down, we’re looking no further than our own back yard.

Fragrant fizz

Like elderflower (our cordial of choice), lavender boasts a subtly fragrant flavour that adds instant freshness to fizzy drinks – and creating your own lavender soda couldn’t be easier.

First, you need to make a batch of syrup. We love this simple recipe from Hello Glow, which combines the herby flavour of lavender with the sweet scent of roses.

Once you’ve got your syrup ready to go, you’re ready to create your lavender soda.

What you’ll need…

  • 1-2 tbsp lavender simple syrup
  • Juice ½ lemon
  • Sparkling mineral water
  • Crushed ice
  • A small handful of freshly picked and rinsed lavender flowers or a tablespoon of dried lavender flowers

*Note: Only use lavender specially grown for consumption or if it's from your own garden and you can trust the pesticides used and ensure it is thoroughly washed -lavender from the garden may not always be suitable.
