What You'll Need:
Rosemary Syrup
- 100ml water
- 100ml granulated sugar
- 3 tablespoons of rosemary leaves
Rosemary Gimlet
- 50ml gin
- 25ml freshly squeezed lime juice
- 25ml rosemary syrup
How to make it:

Rosemary Syrup
- Start by washing and roughly chopping the rosemary. Then add all of the ingredients to a small saucepan
- Heat the mixture gently and stir occasionally until no visible sugar remains and the liquid is completely transparent
- Using a seive or muslin cloth, strain the syrup in to a sterilised bottle or jar and allow to cool
- Once cooled, the syrup can be stored in the fridge
Rosemary Gimlet
Fill a shaker with crushed ice and add the ingredients. Shake until the shaker is ice cold then strain into a chilled glass. Garnish with a strip of cucumber or lime to complement the gin and finish with a rosemary sprig.

- This cocktail is best made with a gin that has been distilled with cucumber as one of the botanicals. The fresh zingy flavour is the perfect aperitif
- The rosemary syrup is excellent drizzled over pancakes, stirred through porridge and even served over fresh strawberries. Try whisking in to fresh cream as an accompaniment to desserts or using as part of a panna cotta
